My newest discovery is mixing 1/4 cup low-fat ricotta cheese with 1 teaspoon of Hidden Valley Ranch dry mix.
The cheese that I use has 50 calories and 2 grams of fat per 1/4 cup serving. The ranch mix is only 5 calories for 2 tablespoons.
Today, I used this fabulous mixture as a dip for baby carrots and celery. Tomorrow, I plan to use it as a baked potato topping (with salsa).

Sounds good! I will have to try it! Wonder if it would make a good salad dressing too, kinda like blue cheese.
Hmm...it doesn't appear to be a salad topper to me, but that is what my boyfriend said. It may work fine for you.
Another tip is that I liked this mix better with less Ranch. The second time I went a little crazy and it tasted more pasty than ricotta cheese like.
I want to try mixing the cheese with other seasonings. I have seen a dry pesto mix before. That sounds heavenly.
This sounds great, I shall try this. Oh and you know what is good to satisfy your pasta urges? Try warming some ricotta with some pasta sauce. Yummo!
I've never tried ricotta. I'd like to, but i'm not very adventurous with trying new stuff.
